Bar creates Keep Sydney Open inspired cocktails

An Italian bar and restaurant in Rushcutter’s Bay, Bar M, has launched a new drinks menu inspired by Keep Sydney Open, as it fights for the city’s night life.

Playfully named ‘Power Hours’, it features classic Italian cocktails with a Mediterranean twist, alongside a selection of Italian snacks and antipasti.

Housed in an historic former tyre factory, the bar’s new menu has been created in response to recent council decisions that could dramatically change Bar M’s licencing conditions and force the restaurant to close its doors at 10pm each night.

Bar M says this will cripple the business and cost many people their jobs. Bar M has rallied the support of the community and is appealing the changes that will restrict Sydney night life.

“I’ve been in this industry for 30 years and am passionate about what small businesses, like ours, contribute to the diverse and vibrant cultural fabric of a city,” said owner Paola Toppi.

“We like to think of our new cocktail menu as a cheeky wink to Sydney and a way to tackle the serious challenges we are facing with a sense of humour and a beautiful cocktail in hand”.

The cocktails have been crafted by Bar Manager Matteo Belkeziz and includes the “Keep Sydney Open”, with bourbon, Porter beer reduction, barrel bitters, fresh lemon juice and a hint of coffee; the “Silent Disco” with Ink Gin, violet and lavender shaken hard with a touch of maraschino amd citrus; “Footloose ” with Frangelico, lime and spiced rum; and “Disco Ball” with London No.1 Blue Gin, mango and peach liqueur shaken with lime, lemon, whites and curacao.
