New Sydney craft brewery Philter has just launched, founded by ex-sales and marketing team member for Lion and Beam Suntory, Stefan Constantoula, along with friend and fellow Marrickville local, Mick Neil.

Helming the brewery is Sam Füss, renowned in the industry as one of Australia’s first female brewers. Sam brings to Philter over 16 years of experience, including Head Brewer positions at Young Henry’s, Schwartz Brewery (now Sydney Brewery) and True South Brewery. The multi-medal winner boasts a flair for creativity, having previously collaborated with celebrated chefs Kylie Kwong (Billy Kwong and Kylie Kwong restaurants) and Luke Mangan (Glass Brasserie, MOJO, and Salt restaurants) in creating bespoke beers, one of which featured mussels, coriander and kaffir lime leaves.

For the brewery's first product, Philter XPA, Füss has used vibrant international hops and left the beer purposely unfiltered. 

Describing the drop, Sam said it’s a “naturally cloudy and easy drinking beer that meets you with tropical fruit aromas, delivers a distinctly refreshing hop flavour and leaves a balanced finish. She’s a beaut.” 

The first batch of Philter XPA launched last month and can now be found at select Sydney stockists and venues, with more being continually added to the list.
