Bird in Hand has unveiled the latest addition to its Nest Egg series, the 2020 ‘Joy’ limited-edition sparkling.

Crafted using Pinot Noir (65%) and Chardonnay (35%) handpicked from Adelaide Hills of altitudes between 450 and 600 metres, Bird in Hand Joy’s fermentation is conducted via a mix of wild fermentation in French oak barrels and selected yeast strains in stainless steel tanks. Following this, each parcel was aged separately on light lees for six months prior to bottling.

After secondary fermentation, the wine spent an additional 48 months on its yeast lees, in-bottle, before final disgorging, resulting in a wine that Bird in Hand describes as exceptional, with captivating aromas of red apple and citrus blossom, layered with nutty hazelnut undertones leading into flavours of spiced honey mead, freshly baked brioche, red berry spice and lemon curd.

“The Nest Egg series highlights exceptional fruit parcels from outstanding vintages, crafted with meticulous attention to detail,” said Sarah Burvill, Senior Winemaker.

“The 2020 Pinot Noir and Chardonnay grapes were particularly remarkable and resulted in the complex yet vibrant flavours of our latest release, the 2020 ‘Joy’ Sparkling.”

Bird in Hand 2020 Joy Sparkling is available now nationwide at an RRP of $79.
