De Bortoli Wines’ latest release is a chilled red aimed at younger wine drinkers, who are increasingly moving away from traditional varieties, choosing fresher, more adventurous drinks.
A recent consumer research report from UK-based Wine Intelligence reports a drop in wine consumption in those under 40 years old, declining from 37 per cent in 2010 to 26 per cent in 2022.
De Bortoli’s response? A non-traditional creation that embraces a chilled approach to red wine consumption, rejecting pomp and prestige, Chill Bill focuses on relaxation with a fruit-forward, lighter taste with vibrant cherry notes.
With a dash of spritz, when chilled, the wine’s red berry aroma comes out, enhancing its juicy fruitiness and muting the alcohol content to create a gentle and refreshing wine packed with flavour.
Crafted from a special blend of grape varieties, including the unique CSIRO-developed Tyrian that produces a deep purple hue, Chill Bill has a spicy fruit essence and hints of sweet berry fragrance designed to appeal to a younger palate that craves variety, especially when celebrating.
Tasting note: Bright, deep purple hue. Red fruited with a floral undertone. Soft and juicy palate with ripe coating tannins. All harmoniously tied together with a fine mousse.
Winemaking: The harvesting of fruit is timed to achieve a balance between the freshness of fruit and the ripeness of tannins. Fermented on skins for 7 days at 23-27°C.
