Located on Oxford St in Darlinghurst, Sydney, Jaffrey and Merlino have transformed the former site of Hello Sailor into exactly the kind of bar they'd like to hang out in - think an eclectic mix of modern European cuisine, cheese and wine, and hip hop.
Big Poppa's will be trading on a restaurant licence with a PSA, meaning that consumers will be able to kick back over pre and post dinner drinks, right up until 3am.
Split over two levels, the top floor will bring to life an Italian restaurant and bar, serving traditional dishes and cocktails with a twist. Downstairs, patrons will be able to relax in chesterfield couches and order from a range of cocktails, around 100 bottles of wine (Italian and international) and 30 different cheeses. Not sure what to select? Fear not. Jaffrey and Merlino have recruited a cheese sommelier to help patrons work their way through the options and there will always be at least four staff behind the stick at any given time.
"We're two guys in our mid-30s and we like going out until late, but not in a venue that plays loud music and serves cheap beer in a plastic cup," Jaffrey told drinks bulletin. "At Big Poppa's, we want to show Sydney that people can stay out late and be responsible. We want to showcase what Sydney's hospitality scene once was and should be. People can come into Big Poppa's and relax and socialise over hip hop music, quality drinks and a good selection of food."
