Tasmania’s Lark Distilling Co has unveiled its latest dark and fruity single malt whisky, Double Tawny.  The limited release elevates it’s signature Classic Cask single malt whisky to sensational new heights. 

Head Distiller and Blender Chris Thomson created Double Tawny by taking the Tawny-dominated Classic Cask and finishing it in a single Australian Tawny cask, selected from Seppeltsfield Winery in the Barossa Valley.

The result is a familiar Tasmanian single malt that quickly develops into a Tawny explosion of raspberry and blackberry, perfectly balanced with creamy caramel and a light dusting of cinnamon.

Thomson said, “ Here at Lark, we look to achieve a balance between the wood influence and individual character of our new make spirit styles so each release is rooted in the place it was produced and the casks in which it was matured.

"However, with Double Tawny we have decided to shift the balance and focus towards the cask influence. This whisky from our Coal Valley Distillery is all about celebrating some of the best Tawny Casks in the world.”

Bill Lark, founder of Lark Distilling, said the blended malt builds on the successes of Lark’s signature Classic Cask: “Our signature malt, Lark Classic Cask has always had a backbone of first fill Australian Tawny casks. Double Tawny takes this Tasmanian icon and finishes it again in the freshest first-fill Tawny casks from Seppeltsfield that we could find. This simple process has turned the Lark Classic Cask experience all the way up to 11. Think about your favourite memory of drinking Lark, and add more oak, more tawny influence and even more complexity.”

On the nose, Double Tawny is punchy and fruity, with notes of rich tawny, dark chocolate, apple and blackcurrant crumble with old oak, leather-bound books and toffee. Flavours of vanilla custard, Lark’s signature candied orange peel, rich toffee and oak develop on the palate, leading to the unmissable tang of rich dark fruit to remnants of oak and smoke.

Founded in 1992 by pioneer Bill Lark, Lark Distilling has been leading the charge in the Australian whisky revolution for almost 30 years. Lark Distilling houses a range of spirits headlined by its single malt whiskies, including the Classic Cask 43% and Cask Strength 58% and collection of unique limited releases such as Rare Cask: PARA 50 Vintage Tawny Cask 51%. They also produce a range of Forty Spotted Gins, and handcrafted Tasmanian spirits and liqueurs, such as the Quiet Cannon Rum and XO Brandy.
