The latest to drop in LARK’s Whisky Bar Series is The Baxter Inn Single Malt, a collaboration that infuses the very essence of Sydney’s number one whisky bar into Australia's finest producer of luxury single malts.

To create the release, the Baxter Inn team spent two days at LARK’s Hobart Distillery playing cask alchemy to best encapsulate the venue's spirit in liquid form. The team ended up settling on a single Seppeltsfield Tawny oak cask, which they then triple-finished with the three pillars of Baxter Inn’s identity. 

“This single cask, matured in Seppeltsfield Tawny Oak cask was given a triple finish, brown ale to represent the classic Sydney knockoff, super Tuscan red wine as a nod to The Baxter Inn’s Italian ties and paxarette, an ode to the back bar, and the classic bottlings of Scotch that it holds,” said Chris Thomson, LARK Master Distiller.

The resultant whisky features a nose laden with fortified-induced fruit cake and spice, balanced against golden syrup and fresh forest foliage. Expect a weighty palate that exudes sultanas, blackberries, figs, and cherry, all leading into a malty finish of chocolate and coffee with just a hint of red wine and dark fruit.

The Baxter Inn Single Malt is the eight edition of LARK’s Whisky Bar Series, following on from venues such a Nola, Evolve, Cobbler, Death and Taxes, Boilermaker House and Lafayette.

Consistently placing in the World’s 50 Best Bars and even placing 6th in 2015, The Baxter Inn is one of Australia’s leading whisky bars, boasting a cellar of 800+ whiskies. Despite its accolades, it maintains a distinctly humble air, with a strict no-booking policy and an all-are-welcome attitude.

Only 220 bottles will be available, retailing at $400 each. Pre-orders from The Baxter inn will be open from the 6th of February, and from LARK’s webstore from the 16th of February.
