Australia's most awarded gin distillery, Never Never Distilling Co., has collaborated with Hains & Co, an Adelaide gin bar, to create an aromatic pink gin that's not actually pink.
The Pink Pepper Gin is a fusion of pink pepper, pink grapefruit, Sichuan pepper, mandarin, poppy seed, gunpowder tea and Murray River pink salt created to pair with tonic or soda for a refreshing cocktail.
Sean Baxter, Co-founder and Brand Director at Never Never Distilling Co., said the flavours featured in the gin were carefully considered to offer both an exciting new taste and versatility across a range of classic cocktails.
"We wanted a gin that was built for a cracking highball gin and soda serve, but also something that was able to deliver fantastic G&Ts.
"It also needed to be flexible enough to work in classic cocktails like a Negroni. This was a really tough one to get right, but the end result is absolutely spectacular, we love what we've been able to create," he said.
Inspired by ancient spice trade routes through central Europe and Asia, the Pink Pepper Gin features Pink Peppercorn and Sichuan pepper for spice, balanced by citrusy notes of pink grapefruit and mandarin. Poppy seed is steeped to extract natural oils and then pot distilled to assist in delivering an extended mouthfeel.
A hint of Chinese gunpowder tea adds an exotic, herbaceous complexity, while pink Murray River salt allows the Botanical flavours to linger across the palate. Combined with Never Never's signature Triple Juniper Process, part of every gin they produce, it delivers an intense flavour hit.
"Gunpowder tea, Sichuan pepper, pink pepper, poppyseed, mandarin, are all flavours that have found their way to us via a cacophony of countries and export routes, and we've tried to bottle that specialness in this release," said Baxter.
