The Cambridge Public House, an English-inspired, award-winning Parisian bar, has set sail for Hong Kong and Australia in a bid to build a more sustainable future and support local communities worldwide.

Having already stopped in Hong Kong, taking over Penicillin on April 30, The Cambridge has set up in Sydney this week, hosting events at -Re and PS40 before heading to the Caretaker’s Cottage in Melbourne on May 8.

The world tour is part of the bar’s climate action plan, the first point on its larger 2023 Global Community Plan, designed to aid the implementation of six United Nations sustainable development goals.

During their visit, the team from The Cambridge will be reviewing the responsible consumption of and production processes used by the bars in Australia and hosting a series of masterclasses in collaboration with the partner bars.

Also on the agenda, the Sydney Climate Bar Talks held with -Re’s renowned bartender Matt Whiley, who recently launched a world-first drinks menu utilising food waste.

Following their whirlwind adventure, the team will create a new database with their findings which will be accessible to bars and clubs around the world looking for inspiration on sustainable practices from their peers.

Founded by Hyacinthe Lescoët and Hugo Gallou, The Cambridge Public House is a Parisian interpretation of a traditional English pub in the heart of the Marais.

Since opening its doors in 2019, The Cambridge has been awarded Bar Magazine’s Bar of the Year 2019, No.92 at The World’s 50 Best Bars Awards in 2021 and mentioned in the Regional Top 10 Honorees for the 2019 and 2022 Spirited Awards.
