Tasmanian whisky distillery Sullivans Cove has recently released to market Australia’s oldest commercially available whisky to date, a 24 year old single-cask bottling aged in second-fill American Oak barrels.
The release, described by Managing Director Adam Sable as “a true labour of love and patience,” embodies Sullivans Cove’s “obsession with producing the best whisky possible without compromise.” The whisky also coincides with the distillery’s 30th anniversary.
HH0004 is Sullivans Cove’s oldest whisky to date. Its release has also broken its own national record to become the oldest commercially-released Australian whisky.
“The crafting of truly great single-cask whisky is a journey of engagement… the people involved must be engaged with the liquid and the process through every season of the expedition; using their senses to listen to the maturation and asking: What does this spirit need to reach its full potential?” said Distillery Manager Heather Tillott.
"Finesse is not born of chance, but of tact and grounded engagement. Twenty-four years of listening and collaboratively working with this cask has allowed a window into the sublime, and we are delighted to share its depth and complexity with you.”
The Sullivans Cove HH0004 whisky was tasted nineteen times over the past three years alone to ensure that it would be bottled at the opportune moment. The release also follows on from other significant Sullivans Cove news such as its receiving of six awards at the 2024 World Whiskies Awards in London and the approaching reopening of its updated visitor experience later this month.
Only 335 bottles of Sullivans Cove HH0004 have been made available, all of which will be sold to the distillery’s mailing list. Winners will be selected via ballot on Monday 20 May. To join the mailing list, click here.
