The Paddington Inn is one of Sydney's Eastern Suburbs' most popular venues in, owned and operated by family-owned hospitality group, Solotel. The pub has a long history of producing quality food and drinks, with the likes of Steve Manfredi, Paul Merrony and a young Matt Moran all in the kitchen once-upon-a-time.
The Paddington Inn will reopen next week with up-and-coming Head Chef, Justin Schott, who has previously worked with Rockpool and Kitchen by Mike. Schott will manage a new open plan kitchen and menu dedicated to fresh produce from the season. The new a la carte restaurant will serve dishes such as chargrilled Fremantle octopus, whole roasted Thirlmere duck and an 850g Rangers Valley rib-eye made to share, while the front bar menu will be focused on modern-day pub food, with fish and chips, salt cod pikelets, jaffles and burgers.
The new drinks list has been created by Solotel Group Sommelier, Matt Dunne, and Bars Manager, Jeremy Shipley.
Dunne has pulled together an outstanding wine list that celebrates the trend for more low-intervention wine interspersed with thought-provoking styles from across the globe, as well as local NSW wines.
Shipley has created a cocktail list that focuses on fresh, seasonal garnishes and dehydrated fruits with aperitif-styles and classics, such as Australian vermouths, negronis and tom collins, using small-batch Australian gins and whiskies.
The new interiors have been designed by the renowned George Livissianis and aim to bring back the original character of the building.
“The intention was to celebrate the Paddington terrace," Solotel Group Creative Director, Anna Solomon said. "We wanted to recreate the sense of a darker, more traditional front bar, using heavier materials that mirror the entrance and traditional living rooms you would see in the front of a Paddo terrace. The dining room is reflective of the modern addition to the terrace, where you would usually find the kitchen, casual dining or family room."

I am so excited to now relaunch The Paddington Inn Bar & Dining, a truly amazing venue that I'm sure will continue to serve the people of Paddington and the Eastern Suburbs outstanding food and drinks for many more years to come.”
