Coogee Pavilion’s highly anticipated middle floor officially opened last month, featuring will's cocktail bar.

will’s is a sophisticated space that showcases the talents of mixologists Ben Wainwright (Bert’s, Charlie Parker’s) and Luke Ashton (This Must Be The Place).

The pair have created a distinctly European drinks list, bringing together classic cues from the Italian coastline, with refreshing influences from the local environment.

Patrons can perch up at the curved marble bar and watch classic drinks being poured, or settle onto a couch to take in the amazing view of Coogee Beach.

On a recent visit to will's, Drinks Trade sampled a High Tide (above) - featuring yellow peach, Limoncello, Rinomato, Beefeater Gin and Prosecco - and a Southerly – featuring rose geranium, aloe vera, coconut water, Beefeater Gin and Lillet - while getting the lowdown on the latest cocktail trends from Aston (pictured main).

What do you see as some of the biggest trends in cocktails in 2020?

I believe we will see a continuation and refinement of some of the trends that have been becoming more mainstream over the last few years. Non-alcoholics, cocktails, wine and beer will continue to grow as a category as the health conscious consumers look for new alternatives to drinking alcohol in bars and restaurants.

Progressive bartenders will continue developing new ideas around the creations, based on the increasing non-alcoholic products currently on the market.

Another key trend will be around fermentation, with bartenders looking to perfect the skills they have been developing and creating not only palatable, but delicious fermented cocktail ingredients and drinks.

The other trend I think we can expect to see more of is around forced carbonation of drinks, allowing bartenders the ability to create consistent and refreshing carbonated cocktails and non-alcoholic drinks.
