Tasmania’s Waubs Harbour, the whisky distillery co-founded by ex-Lark and Overeem Rob Polmear, has released its latest limited release expression, the PX Sherry. 

Waubs Harbour PX Sherry is a single cask release that embodies the distillery's no-shortcuts approach to whisky production. This includes coopering the sherry cask on-site in partnership with Laurie Schmeider of Encasa Cooperage Services. 

“It’s our first pure Sherry cask whisky and made with the first cask to be coopered here on-site at Waubs Harbour,” said Bec Polmear, who founded Waubs Harbour along with Rob Polmear and Tim Polmear. 

“Working on-site and in real-time with the cooper, Laurie from Encasa, to rejuvenate the cask to Rob's specifications has given us a greater level of influence over the final flavour profile and we believe the whisky really reflects that.”

Since launching early last year, Waubs Harbour has commanded a significant domestic following which saw it sell out its most recent limited release, a stout cask, in less than an hour after being made available.

Similar demand is expected for the PX Sherry release, which includes only 557 bottles.

“This one is a very deep and decadent whisky, bottled at 51%,” said Bec Polmear.

“It was finished in a rare 300L premium Pedro Ximenez Sherry cask from Dutschke Wines in the Barossa after initial maturation in Australian McWilliams Apera Sherry casks.”

The Waubs Harbour distillery, founded by Bec, Tim, and Rob Polmear, employs a no-shortcuts approach to producing the finest expressions of Tasmanian whisky possible, drawing on Rob’s experience as Head of Production at Lark and Head Distiller at Overeem. Its flagship series, currently released in batches, starts from $170 per 500ml bottle, and includes both the Waubs Original and the $50 more expensive Founder's Reserve.

Waubs Harbour is located in Bicheno, a coastal town on the east coast of Tasmania. The distillery itself was converted from an old oyster hatchery and now features five bond rooms and an ocean-run cooling system.
